Foursquare Premise...

Foursquare Premise (46.0%): Premise (Exceptional Cask Series VIII) is a sherry cask finished rum following the lineage of double matured rums of the Foursquare portfolio like the earlier Port and Zinfandel Cask releases. It is a blend of pot and column still rums aged first in ex-bourbon casks for three years, then transferred to ex-sherry casks for an additional seven years and bottled in January 2018. Like any other product from Foursquare it is unadulterated with any additional sugar and/or caramel coloring.

Color: Medium amber with an orange tint. Slow, persistent and thick legs.

Nose: Orange peel, vanilla extract, cigar tobacco and lightly toasted dry wood. Banana chips, molasses and apple skin. Maraschino cherries and new leather jacket. Light and not overwhelming but incredibly layered...

Palate: White Grape juice, lemon wedges and tonic water. Sharp sweet spices: nutmeg, cinnamon sticks and cloves. Apricot pits, green almonds and Granny Smith apples. Tart apple cider... Thin mouthfeel.

Finish: Very long with bitter sweet spices. Cloves, crushed red peppers and aged grappa.

Overall: It doesn't have the sherry cask influence I was expecting actually... I was getting ready to taste a much sweeter rum. It is more on the drier side packed with tart fruits, pits, seeds and spices... Although it feels like it is very easy drinkable rushing this rum would totally ruin that incredibly long and satisfying finish. Another beautiful rum from Richard Seale and Foursquare. No need to hide by now, I am a big fan... (Who isn't?) Cannot wait to write about the other new ones sitting on my shelf.
